Treat Bag Tuesdays - Easy Peasy Chocolate Fudge

Are you intimidated by making candy?  It can be a little tricky - different temperature stages, and lots of other variables, can definitely affect your outcome... and turn your sweet treat into a sloppy mess or a burnt disaster. 

But guess what - it doesn't have to be difficult.  Here's a recipe that you can even do with the kids... it is SUPER easy, SUPER tasty, and SUPER versatile.

And you don't even need a candy thermometer.

Easy Chocolate Fudge

2/3 cup whipping cream (35%)
1/4 cup butter
1 1/4 cup white sugar
16 large marshmallows
1 tsp vanilla
1 1/2 cups chocolate chips or chocolate wafers
3/4 cup slivered almonds, walnuts, or other nuts (optional) 

In a large saucepan, melt together the butter, sugar and vanilla.  Add the cream and the marshmallows.  Keep over medium heat until the marshmallows are melted and sugar is completely dissolved.

Let boil lightly, stirring frequently, for 5 minutes. 

When the time is up, remove from heat and stir in the chocolate.  Do not return to the heat - it will be hot enough to melt the chocolate on it's own.  Stir, stir, stir, until all the chocolate is melted through.  At this point, you can stir in your nuts, if you're using them.

Lightly spray a 9x9 cake pan with cooking spray.  Pour your fudge mixture in and let set until completely cool. 

When I mentioned that this recipe is super versatile, I wasn't lying... I've done TONS of flavour variations with this recipe.  You can use white chocolate wafers, butterscotch chips, or even peanut butter chips instead of the plain chocolate.  You can add different flavourings, and different additions.  My mom and I used to make a white chocolate version with dried cranberries (YUM!), and a plain chocolate version flavoured with orange oil, with candied citrus peel on top. 

Your imagination really is the tasty limit.
